Fiesta Ravioli

Fall is in the air.  We went from scotching hot a few weekends ago to being cold this past weekend. So cold we had long sleeves and jackets on at the car show on Sunday.  I am also getting in the mood for soups and anything pumpkin!

Tonight Bill and I had one of our super easy favorite meals.  This Fiesta Ravioli has only 4 ingredients and takes less than 30 minutes to get it on the table.  The next time I am going to make it like a lasagna by layering the ingredients into a baking dish.  You could always add additional toppings or ingredients to this dish as well.  Such as onion, jalapenos, or black olives.  Bill and I like to eat ours topped with sour cream.


Fiesta Ravioli

25 ounce bag frozen beef ravioli
10 ounce can enchilada sauce
15.5 ounce jar salsa
2 cups cheddar Cheese

Boil ravioli until tender.  While ravioli are boiling, in a skillet heat the salsa and enchilada sauce. Drain ravioli and add to the skillet with the salsa and enchilada sauce.  Sprinkle with cheese and continue to cook until cheese is melted.  Enjoy!
