Cherry Almond Cupcakes

Cherry Almond Cupcakes were another flavor that I took to our Corvette Club picnic this weekend

This was my favorite flavor!  I love anything Cherry or Lemon flavored.  The cherry syrup that I used in the icing made it a pretty pink color.  I think just looking at these cupcakes screams summer and fun!


Cherry Almond Cupcakes

Cupcakes:
1 box cherry chip cake mix
1/3 cup oil
1 cup water
3 eggs
1/2 teaspoon almond

Mix and bake cake mix per package directions adding the almond flavoring to the batter.   Put batter in cupcake pans.  Will make between 18 and 24 cupcakes

Frosting:
3 sticks butter, softened
6 cups powdered sugar
pinch of salt
4 teaspoons vanilla
1 teaspoon almond
6 tablespoons cherry syrup

Beat softened butter, powdered sugar and pinch of salt on medium speed until combined.  Add vanilla and almond beating on medium speed until creamy, 3 minutes.  Beat in cherry syrup until fluffy, 1 more minute.
